Grape variety: Piquepoul, variety that is harvested the latest at the domaine sometimes as late as beginning of October.
Terroir: Stony clay and limestone
Winemaking: Harvested at night to preserve freshness, pressed immediately. The temperature is controlled but there is no racking on this wine as what is sought after is tension and a mineral, salty backbone
