Viñedos y Reservas
Viñedos y Reservas is a winery in Castilla la Mancha in the province of Toledo. They have been producing some of the famous spanish sparkling wine “Cava” since 1987. 100% of their grape production goes into the making of this wine with the tradtional method of bottle fermentation.
They use a selection of indigenous spanish varietals such as Granacha, Macabeu (also called Viura), Airen, typical of the Castilla la Mancha and Verdejo, one of the best white varieties in Spain. They also use Chardonnay and Sauvignon in the blending of their wines.
Gotas de Plata – Brut
Vineyard: from own vineyard and bought grapes.
Grape variety: 50 % Garnacha, 50 % Tempranillo
Terroir: Limestone and stony
Winemaking: Manual harvest, pressed directly after harvest, fermented in stainless-steel, second fermentation in bottle and aged 9 months in stacks.
