A young Englishman established in the Languedoc since 2003. Before that he studied litterature and worked in fishing journalism and in cycling tourism. He first visited the area to renovate a house, ended with a wife an a passion for wine. Self-taught, he farms 4,5 ha on volcanic soils around Caux, the right size if you want to do all the work on your own. He wants to stay small to improve his qualities as a winemaker but also to keep his wine “home-made”: a lifestyle choice. He farms mediterannean varieties: Grenache, Carignan, Cinsault for reds, Terret, Grenache gris/blanc and
Marsanne for whites. He chose the vineyards according to their intrisic qualities such as the volcanic soils but he also avoids south-facing vineyards to keep a freshness too often forgotten in Southern wines. He farms organically, does not use any additives in the vineyards and does not even cold-settle whites before fermentation. All the wines are aged on lees of eight months and bottles them unfiltered and without sulfur.
